Hafod (pronounced "Havod") is a traditional raw milk hard cheese handmade on Wales’ longest certified organic dairy farm, Bwlchwernen Fawr. Julie and I have loved the cheese since we first enjoyed it at an industry tasing in Madison. It was hard to source, but we are thrilled to have it in our cheese case.
They only use milk from the 75 Ayrshire cows to make Hafod. Ayrshire milk is rich in butterfat and protein, and is widely regarded as being ideally suited to cheesemaking. Ayshire cows were selected for their hardiness to withstand the hilly terrain found at Bwchwernen Fawr. It is this unique combination of organic Ayrshire milk and traditional cheesemaking techniques that give Hafod its buttery, rich and nutty flavors.
The cheese is made in 10kg and 18kg rounds, cloth bound and matured to 16 months, during which time it develops a traditional mould rind.

To maintain quality, our cheese inventory is constantly refreshing. We cannot guarantee that a cheese is in stock at a quantity sufficient to fill on order. Orders for out of stock or limited quantities will be notified, substitutions recommended and purchases partially or wholly refunded if necessary.
1-2 day shipping is required at checkout. Cheese is shipped on Monday - Wednesday in insulated packaging with cold packs. Cheese should be refrigerated immediately after receipt.
All our orders are sliced by hand. Slicing cheese is an inexact art. Weights are approximate and will vary.
