Growers who practice this kind of viticulture claim to use chemicals less often and less aggressively than conventional growers. Parcels vinified separately in temperature-controlled stainless steel tanks. 12°C cold-settling, organic yeasts for inocculation. 24 months maturation in bottle, no added sulfur.
