Domaine De Pellehaut
A subtle blend of Merlot and Tannat: the former contributes smoothness and round fruit character while the latter brings density and a pronounced structure. The grapes are carefully destemmed and lightly crushed before fermentation in stainless with pumping over. The wine is left in tank to macerate for around ten days, then run off with the cap gently pressed. The final cuvée is aged partially in oak barrels with regular racking.
