A few years ago, the team encountered a batch of cheddar that did not meet their expectations. During a delivery to Pittsburgh, they connected with someone from East End Brewing, who shared that their barleywine beer had turned flat. This conversation sparked an idea: why not transform two mishaps into something extraordinary? They decided to soak their cheddar in the flat beer, and to their delight, the flavors complemented each other beautifully. East End Brewing named their beer Gratitude, and in the spirit of wordplay, they dubbed their cheese Grateful Ched. Having sold out of that initial batch, they continued to soak their aged cheddar in the beer. This sweetly sour beverage adds just the right amount of moisture to the dry and crunchy aged cheese, creating a perfect pairing. They encourage everyone to give it a try and share their thoughts.

We ship cheese using UPS Monday through Wednesday in insulated packages. UPS Next Day or 2 Day Air is recommended for shipments to states not boarding Illinois.

Cut, Wrap & Receiving

All our orders are sliced by hand and wrapped in breathable cheese wrap. Slicing cheese is an inexact art. Weights are approximate and will vary. To ensure optimal condition upon delivery, we employ Koldtogo Extreme Cube Insulated Shipping Liners and no sweat gel ice packs. Cheese should be refrigerated immediately upon arrival

Fulfilment

To maintain quality, our cheese inventory is constantly refreshing. We cannot guarantee that a cheese is in stock at a quantity sufficient to fill an order. Orders for out of stock or limited quantities will be notified, substitutions recommended and purchases partially or wholly refunded if necessary.
