Whitney is named in honor of Tim Whitney, the longest-standing member of the Jasper Hill team. This cheese celebrates the individuals dedicated to establishing the gold standard for artisan cheese quality. A true reflection of community, Whitney is crafted in a semi-firm mountain style using traditional methods that embody a genuine “Taste of Place.”
Whitney is produced using raw milk sourced from Jasper Hill Farm’s own grass-fed cows. The milk is transformed in the newly renovated farmhouse creamery, which showcases reclaimed copper vats from the Jura Mountains. After the curds are formed and cooked, they are placed into draining molds under vacuum ‘bells,’ resulting in a beautifully smooth and tightly-knit texture.

Recent equipment enhancements have enabled the creamery team to create an innovative natural culture program. This process involves incubating starters and fermenting rennet within a clarified whey solution. The resulting cultures and enzymes, combined with the raw milk microflora, produce a complex, terroir-driven cheese.

Whitney features a velvety-smooth, pliable texture with distinctive notes of toasted nuts, cured ham, and sweet cream. It pairs wonderfully on a cheese board alongside cured meats, dried figs, and pickled shallots, complemented by a natural white wine. Modeled after traditional melting cheeses, Whitney is perfect for use with a raclette machine; it melts beautifully over a plate of roasted potatoes, garnished with cornichons and charcuterie.

We ship cheese using UPS Monday through Wednesday in insulated packages. UPS Next Day or 2 Day Air is recommended for shipments to states not boarding Illinois.

Cut, Wrap & Receiving

All our orders are sliced by hand and wrapped in breathable cheese wrap. Slicing cheese is an inexact art. Weights are approximate and will vary. To ensure optimal condition upon delivery, we employ Koldtogo Extreme Cube Insulated Shipping Liners and no sweat gel ice packs. Cheese should be refrigerated immediately upon arrival

Fulfilment

To maintain quality, our cheese inventory is constantly refreshing. We cannot guarantee that a cheese is in stock at a quantity sufficient to fill an order. Orders for out of stock or limited quantities will be notified, substitutions recommended and purchases partially or wholly refunded if necessary.
