“I really appreciate wines from the Austria-Hungary border and set out to make a wine inspired by these bright and refreshing easy drinkers. I knew I had to find a vineyard that was carved out of the forest and remained a little wild to be able to capture the feel of the wines I was inspired by. A unique opportunity presented itself in the Alexeli Vineyard, carved out of the forest and still surrounded by a ring of trees it really looked the part. When I met the owner and learned his minimal intervention sustainable farming techniques I knew it would be great. An added bonus is this site is a short distance away from the winery so it would be a chance for us to showcase our local terroir, not an easy feat for an urban winery.”
“The pH of the wine is very low so fermentation was a slow and long process going well into spring. Luckily we were able to use the very last spring snow and freeze to cold stabilize. A minimal amount of sulphites were added before bottling. This wine is unfined, unfiltered and completely wild.
