Producer Notes

One Eight Distilling is named for Article One Section Eight of the Constitution, which among other things provided for the establishment of a district to serve as the nation’s capital. This connection to history and tradition informs our founding values: we use local ingredients to create the bold flavors of our region for the people who take no shortcuts.

UNTITLED No. 6 Batch 2 brings back our Double Gold Medal-winning blend of 14-year high-rye bourbon finished in Cognac, Muscat, and Oloroso sherry barrels. We have married the best characteristics of these Old and New World spirits to produce a complex and elegant bourbon. 

After initially presenting notes of leather, vanilla, French oak, and dried apricot on the nose, the palate is dominated by Cognac and spice-forward rye. The bourbon quickly gives way to sweeter tones of maple, raisins, and blackberries. Share this great whiskey with friends on a cold winter's night.

Shipping Cheese

We ship cheese using UPS Monday through Wednesday in insulated packages. UPS 2 Day Air is recommended to shipments to states not boarding Illinois.

Shipping Wine (Illinois Only)

We ship wine to Illinois Residents Only, UPS Adult Signature in required. Wine shipments require special packaging and therefore will likely be shipped separate from other items purchased.

Local Pick Up & Delivery

Local Pick Up is available for all items and can be selected at check out. Most items will be available same day. Cheese trays and other prepared items will could require extra time. Delivery is available, but could be limited at times due to staffing.
