Beaufort Été AOP

France
Raw Cow's Milk

Originating from the Savoie region in the French Alps, Beaufort is a unique cheese crafted traditionally from cow's milk. Renowned for its smooth, creamy texture and distinctive flavor, Beaufort proudly holds AOC status and derives its name from the beautiful Beaufort Valley in Savoie.

Boasting a rich and complex taste, Beaufort is often described as having nutty, fruity, and subtly sweet notes. The flavor can vary depending on the seasons and the cows' diet. Aged for a minimum of four months, Beaufort develops a firmer texture, transitioning from semi-firm to hard, complemented by a natural rind. Its delightful melt-in-the-mouth quality makes it an excellent choice for traditional Alpine dishes.

Beaufort d'Été (Summer Beaufort) is made in the summer months as cows ascend and graze the higher slopes
