The Conserverie Gonidec, based in Concarneau since 1959, keeps alive the know-how and traditions of the fish canning industry in the town. Fish are caught on day-boats, just off the coast of Brittany. They are unloaded and brought to the cannery during the night and then processed early in the morning. After being sorted by size they are put into frying trays and then cooked to a special recipe before being packed by hand into individual tins in order to maintain freshness and quality. Conserverie Gonidec is the last sardines factory in the famed and picturesque harbor of Concarneau.
