The outcome of two years of experimentation is a perfectly cured cheese that harmonizes beautifully with the flavor and aroma of truffles. This cheese is firm and compact, featuring a hard, brown rind, and a well-defined shape. Its texture is buttery, soluble, and slightly sticky.

Crafted with truffles sourced from Piedmont, Italy, this cheese stands out; previous attempts with truffles from other regions resulted in a loss of aroma and flavor during maturation. With the Italian truffle, we have achieved the exceptional quality we aimed for. It contains 1% of 100% natural truffle, and we ensure that all ingredients added to our cheeses are as natural as the sheep's milk used in their production. Therefore, we steer clear of truffle oils, concentrates, or essences, which can complicate digestion and detract from the flavor of both the cheese and the truffles.

We ship cheese using UPS Monday through Wednesday in insulated packages. UPS Next Day or 2 Day Air is recommended for shipments to states not boarding Illinois.

Cut, Wrap & Receiving

All our orders are sliced by hand and wrapped in breathable cheese wrap. Slicing cheese is an inexact art. Weights are approximate and will vary. To ensure optimal condition upon delivery, we employ Koldtogo Extreme Cube Insulated Shipping Liners and no sweat gel ice packs. Cheese should be refrigerated immediately upon arrival

Fulfilment

To maintain quality, our cheese inventory is constantly refreshing. We cannot guarantee that a cheese is in stock at a quantity sufficient to fill an order. Orders for out of stock or limited quantities will be notified, substitutions recommended and purchases partially or wholly refunded if necessary.
